VENISON BURGER
4 servings

Ground venison is very lean and is best when combined with a bit of fattier ground beef.

Combine:

  • 10 ounces ground venison
  • 6 ounces ground chuck

Or chill and grind together:

  • 14 ounces venison, cut into chunks and trimmed of connective tissue
  • 3 ounces beef suet

Shape, season, cook, and serve as for Hamburger Patties. Alternatively, substitute the venison mixture for the ground beef in Becker Burgers or Beet and Caper Burgers.
