BECKER BURGERS

These braised burgers are flavorful, juicy, and tender. Serve on top of whole wheat toast, with the pan juices poured over the burgers.

Divide into 4 equal portions and form each into a patty about ¾ inch thick:

  • 1 ½ pounds ground round or sirloin

Heat in a heavy skillet over medium-high heat:

  • 2 tablespoons bacon fat, lard, Clarified Butter, or vegetable oil

Add the patties and cook for 2 minutes. Turn and cook on the other side for 4 minutes for medium-rare. Sprinkle the burgers generously with:

  • Black pepper

and then:

  • 2 tablespoons soy sauce
  • 2 tablespoons port
  • Several drops of hot pepper sauce

Remove the skillet from the heat, cover, and let stand for 5 minutes before serving.
