These old-fashioned Italian desserts get their almond flavor from amaretti cookies, which are traditionally made from apricot kernels.

Combine in a medium bowl:

  • ¾ cup crushed amaretti or Almond Macaroons
  • ¾ cup heavy cream
  • ¼ cup powdered sugar
  • Pinch of salt

Let stand 1 hour. Whip to soft peaks:

  • 1 cup heavy cream

Fold in the cookie mixture and:

  • 1 teaspoon vanilla

Divide among 12 paper muffin cups set in a muffin tin or on a baking sheet. Before freezing or when partly frozen, decorate the tops with:

  • Finely chopped toasted almonds (about ½ teaspoon per tortoni; 2 tablespoons total)
  • (Candied cherries)

Freeze until firm, for about 3 ½ hours.
