MARBLE ANGEL FOOD CAKE

Whisk together the flour mixture for Angel Food Cake. Transfer one-half of the flour mixture to another medium mixing bowl and whisk in ¼ cup (20g) unsweetened cocoa powder. Set both flour mixtures aside. Beat the egg whites as directed. Once they are fully beaten and all the sugar is incorporated, transfer half the egg white mixture to a large bowl. Fold the plain flour mixture into one of the bowls of egg whites in 3 parts. Fold the flour-cocoa powder mixture into the other bowl of egg whites in 3 parts. Alternate the batters in the tube pan, either by layering the batters or by alternating blobs of each batter into the pan, and then swirling with a knife to marble.
