ADDITIONS TO CRANBERRY SAUCE

Prepare Cranberry Sauce I, or Whole-Berry Cranberry Sauce, adding along with the sugar:

  • Up to ½ teaspoon coarsely ground black pepper, ground cinnamon, or Five-Spice Powder
  • Up to ¼ teaspoon ground cloves
  • 1 tablespoon minced peeled fresh ginger or ½ teaspoon ground ginger
  • Up to 1 tablespoon minced thyme or rosemary
  • 3 tablespoons port, bourbon, dry red wine, cherry or pomegranate juice, or balsamic vinegar
  • ½ cup dried cherries, currants, or raisins
  • 1 cup diced apples
  • ¼ cup minced shallots
  • ½ cup pecans or walnuts, toasted and chopped
  • 1 tablespoon molasses or sorghum syrup, or to taste

Instead of 2 cups sugar, you may sweeten cranberry sauce with one of the following:

  • 2 cups brown sugar or coconut sugar
  • 1 to 1½ cups honey or maple syrup, to taste
