Prepare Cranberry Sauce I, or Whole-Berry Cranberry Sauce, adding along with the sugar:
- Up to ½ teaspoon coarsely ground black pepper, ground cinnamon, or Five-Spice Powder
- Up to ¼ teaspoon ground cloves
- 1 tablespoon minced peeled fresh ginger or ½ teaspoon ground ginger
- Up to 1 tablespoon minced thyme or rosemary
- 3 tablespoons port, bourbon, dry red wine, cherry or pomegranate juice, or balsamic vinegar
- ½ cup dried cherries, currants, or raisins
- 1 cup diced apples
- ¼ cup minced shallots
- ½ cup pecans or walnuts, toasted and chopped
- 1 tablespoon molasses or sorghum syrup, or to taste
Instead of 2 cups sugar, you may sweeten cranberry sauce with one of the following:
- 2 cups brown sugar or coconut sugar
- 1 to 1½ cups honey or maple syrup, to taste
