FIVE-SPICE POWDER
About ¼ cup

This pungent, slightly sweet mixture of ground spices sometimes contains cardamom or ginger, and black peppercorns can be substituted for the Sichuan peppercorns. Use sparingly when preparing roasted meats or poultry.

Grind into a powder in a spice grinder:

  • 6 whole star anise
  • 1 tablespoon fennel seeds
  • 1 tablespoon Sichuan peppercorns
  • 1 teaspoon whole cloves (about 20)
  • 1 cinnamon stick, preferably cassia, crushed into shards

Store in an airtight container.
