I. CLASSIC

6 servings

Canned mandarin orange sections and pineapple chunks can be substituted for the fresh oranges and pineapple.

Peel and section into a bowl:

  • 6 oranges

Add and gently combine:

  • 3 bananas, sliced
  • ½ pineapple, peeled, cored, and diced (2½ to 3 cups)
  • ½ to 1 cup shredded sweetened coconut, to taste
  • (½ to 1 cup miniature marshmallows, to taste)
  • (¼ cup orange liqueur, sherry, or port)

If you have not used marshmallows, stir in:

  • (¼ to cup sugar, to taste)

Cover and refrigerate for at least 3 hours and up to 12 hours to blend the flavors.

II. MEGAN’S MODERN AMBROSIA

4 to 6 servings

For a fantastic dessert, top this with Whipped Crème Fraîche and serve with Almond Macaroons II.

Peel and section over a medium bowl to catch the juice:

  • 4 oranges, blood oranges, or a combination

Add to the fruit and its juice:

  • ¼ cup dry white wine, dry vermouth, or Lillet Blanc
  • 5 dried dates, pitted and chopped
  • (1 tablespoon honey)
  • A few drops orange flower or rose water

Refrigerate for at least an hour to allow the flavors to meld. Just before serving, add:

  • cup flaked or shredded unsweetened coconut, toasted
  • ¼ cup pistachios, toasted and chopped
