ADDITIONS TO SCRAMBLED EGGS

I. Cook or reheat up to ½ cup of one of the following in the pan before adding the eggs:

  • Sautéed asparagus pieces
  • Wilted Tender Greens
  • Sautéed Mushrooms
  • Sautéed Onions or Melted Leeks

II. Whisk one of the following into the eggs before cooking:

  • Pinch of grated or ground nutmeg
  • ¼ cup soft goat cheese, cottage cheese, farmer cheese, cubed cream cheese, or yogurt
  • Up to 2 tablespoons finely chopped green onion

III. Fold one of the following into the eggs toward the end of cooking:

  • ¼ cup grated or crumbled Cheddar or other hard cheese
  • Up to 1 tablespoon chopped herbs
  • Crumbled cooked bacon, sausage, or diced ham
  • Small chunks of smoked salmon or picked crabmeat
