I. Cook or reheat up to ½ cup of one of the following in the pan before adding the eggs:
II. Whisk one of the following into the eggs before cooking:
- Pinch of grated or ground nutmeg
- ¼ cup soft goat cheese, cottage cheese, farmer cheese, cubed cream cheese, or yogurt
- Up to 2 tablespoons finely chopped green onion
III. Fold one of the following into the eggs toward the end of cooking:
- ¼ cup grated or crumbled Cheddar or other hard cheese
- Up to 1 tablespoon chopped herbs
- Crumbled cooked bacon, sausage, or diced ham
- Small chunks of smoked salmon or picked crabmeat
