MELTED LEEKS

A delectable side dish that also makes a fine topping for pizza or crostini, or use as you would Caramelized Onions.

Melt in a large skillet over medium-low heat:

  • 2½ tablespoons butter

Add and cook until starting to soften, 4 to 5 minutes:

  • 3 large leeks, trimmed, halved lengthwise, well cleaned, and thinly sliced

Add:

  • 1 cup chicken or vegetable stock or broth or 1 cup water
  • ¼ teaspoon salt
  • 1 sprig fresh thyme or ¼ teaspoon dried thyme

Cover and simmer until the leeks are tender, about 5 minutes. Uncover, increase the heat to medium-high, and add:

  • ¼ cup dry white wine

Boil until the liquid is reduced by half, 10 to 15 minutes. Stir in:

  • 2 tablespoons heavy cream
  • (½ teaspoon curry powder or a pinch of grated or ground nutmeg)

Cook until the cream is absorbed. Discard the thyme sprig, if using, and season to taste with:

  • Salt and black pepper

If desired, garnish with:

  • (Minced chives or chopped parsley)
