MEGAN’S AVOCADO CLUB SANDWICH

This vegetarian club gets an extra boost of flavor from miso mayonnaise and salty, chewy mushroom bacon. Eating one has no bearing on your membership in the club mentioned above.

Mash together with a fork in a small bowl until smooth:

  • ½ cup mayonnaise or vegan mayonnaise
  • 1 tablespoon white miso

Lay out on a countertop:

  • 4 slices country white or multigrain bread, lightly toasted

Spread the mayonnaise mixture on the inside of all 4 slices of bread (you will have extra—reserve it for another use). Divide between 2 of the pieces of bread:

  • ½ avocado, pitted, peeled, and thinly sliced
  • 4 slices fresh tomato or 6 slices Slow-Roasted Tomatoes
  • ½ cup Mushroom Bacon, or 4 slices of your favorite vegetarian bacon, cooked until crisp
  • 4 lettuce leaves

Top with the remaining bread slices.
