PASTA SALAD WITH CHICKEN OR SHRIMP
About 10 servings

Prepare one of the following:

  • Broiled Chicken or Grilled Chicken, made with 2 pounds bone-in chicken parts or 1 pound boneless
  • Grilled or Broiled Shrimp I or Blackened Shrimp

Let your chosen protein rest until cool enough to handle. Peel and halve the shrimp, if using, or pull the chicken off the bone, discard any skin, and cut into bite-sized pieces. Cook in a large pot of well-salted water until al dente:

  • 1 pound fusilli or penne

Drain, rinse, and place in a large serving bowl. Once cool, add the shrimp or chicken, along with:

  • 3 medium tomatoes, seeded and chopped
  • (1 cup jarred roasted red peppers, cut into strips)
  • 4 green onions, thinly sliced
  • 2 garlic cloves, minced
  • ½ cup pitted and chopped olives or ¼ cup drained capers
  • (¼ cup pine nuts or sliced almonds, toasted)
  • ¼ cup finely chopped basil or parsley
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons lemon juice, or to taste
  • ½ teaspoon salt, or to taste
  • ½ teaspoon black pepper

Toss together and serve at room temperature.
