BLACKENED SHRIMP

A superlative dish for those who do not feel like they’re cooking unless the smoke alarm goes off.

Prepare:

  • Cajun Blackening Spice

Toss in a bowl with:

  • 2 to 2½ pounds shell-on shrimp (preferably 2630 or larger), deveined, above

Turn on an exhaust fan and open a window. Heat in a large skillet over high heat:

  • 2 tablespoons vegetable oil

When the oil just barely starts to smoke, add the shrimp in a single layer and cook, turning once, until the shells turn pink and the flesh is opaque, about 1 minute per side. Serve with:

  • Lemon wedges
