THREE-PEA SALAD

For a main-course salad, add sautéed shrimp.

Prepare the dressing for:

  • Asparagus Sesame Salad

Cook in a large pot of boiling salted water for 2 minutes:

  • 2 ounces sugar snap peas (about 1 cup)

Add and cook for 1 minute:

  • 1 ounce snow peas (about ½ cup)
  • ½ cup fresh or frozen green peas, thawed

Drain and rinse under cold water. Pat dry. Toss the peas in a bowl with the dressing and:

  • 6 cups pea shoots or bean sprouts (about 8 ounces)
