CUCUMBER SALAD

I. For a special treat, add crabmeat to make a seafood cocktail.

Combine in a medium bowl:

  • ¼ cup rice vinegar or white wine vinegar
  • (4 teaspoons toasted sesame seeds)
  • 2 teaspoons sugar
  • (1 garlic clove, minced)
  • (¼ teaspoon red pepper flakes)

Add and toss to coat:

  • 1 large cucumber, peeled, halved lengthwise, seeded, and cut into thin strips or slices

Cover and refrigerate until chilled, about 1 hour.

II. CREAMY CUCUMBER SALAD

Make a double batch of Raita or Tzatziki (use 2 cucumbers for the latter). Cut the peeled and seeded cucumbers into bite-sized chunks or slices.
