AVOCADO AND CITRUS SALAD
4 servings

Prepare:

  • Vinaigrette, Miso Dressing, or Poppy Seed–Honey Dressing

Cut into suprêmes:

  • 1 large grapefruit
  • 2 large oranges

Cut crosswise on a slight diagonal into ¼-inch-thick slices:

  • 2 avocados, pitted and peeled

Marinate the avocado for 5 minutes in ½ cup of the prepared dressing. Place in a large bowl:

  • 1 small head romaine lettuce, shredded, or about 6 cups baby spinach leaves

When ready to serve, toss in enough dressing to lightly coat the leaves. Plate the greens and alternate the avocado and citrus sections on top. Sprinkle, if desired, with:

  • (Toasted sesame seeds)
