WEDGE SALAD

A steakhouse favorite. Iceberg is classic, but romaine or butter lettuce may be substituted (cut them into serving-sized wedges).

Have ready:

  • Creamy Blue Cheese Dressing or Ranch Dressing
  • 4 slices bacon, cooked until crisp and crumbled
  • 2 Hard-Boiled Eggs, finely chopped

Cut into 4 wedges, leaving the core intact to help hold the leaves together:

  • 1 head iceberg or butter lettuce

Place the wedges on serving plates and drizzle with dressing to taste. Sprinkle with the bacon, egg, and:

  • (1 medium tomato, diced)
  • ¼ cup minced chives, red onion, or Quick-Pickled Onions
  • (2 radishes, thinly sliced)
  • Freshly cracked black pepper
