CREAMY BLUE CHEESE DRESSING
About 1 cup

Combine in a blender:

  • ⅓ cup crumbled blue cheese
  • 2 ounces cream cheese
  • ¼ cup buttermilk
  • 1 tablespoon red wine vinegar
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Blend until smooth. If the dressing is too thick, add a little more buttermilk to reach the desired consistency. Transfer to a bowl and stir in:

  • ¼ cup crumbled blue cheese

Season to taste with:

  • Salt and black pepper

Use immediately, or refrigerate for up to 5 days.
