VANILLA EXTRACT
About 1 cup

Cut lengthwise in half:

  • 5 vanilla beans

Using the tip of a spoon, scrape the seeds from the pods. Place the pods and seeds in a pint jar. Cover with:

  • 1 cup high-proof alcohol such as Everclear, vodka, or overproof rum

Close the jar tightly and shake every so often. When the alcohol is deep brown, 1 to 1 ½ months, the vanilla is ready to use.
