ALMOND GARNISH (AMANDINE)
About ½ cup

This classic garnish glorifies the most commonplace dishes. As a variation for a vegetable garnish, substitute hulled pumpkin or sesame seeds for the almonds.

Melt in a small skillet:

  • 4 tablespoons (½ stick) butter

Add and stir over low heat until the nuts are lightly browned:

  • ½ cup sliced almonds
  • Salt to taste
