BASIC FREEZER JAM
About 5 half-pint jars

Whisk together in a medium bowl:

  • 2 cups sugar
  • 8 tablespoons instant or freezer jam pectin

Stir in:

  • 4 cups crushed, finely chopped, or grated fresh fruit, such as berries of all kinds, peaches, mangoes, plums, pears, etc.

Let the mixture sit, stirring occasionally, for 10 minutes. Taste and add if needed:

  • (Lemon or lime juice to taste)

Ladle into clean plastic or glass freezer jars, leaving ½ inch headspace, and let sit at room temperature until thickened, about 30 minutes. Place lids on jars, label and date them, and refrigerate for up to 3 weeks or freeze for up to 1 year.
