PEANUT BUTTER OR TAHINI FUDGE
About 1 ½ pounds; 64 pieces

If using tahini, stir it well to incorporate any oil that has separated out. For another fudge-like tahini candy, see Sesame Halvah.

Line an 8-inch square pan with buttered parchment paper or foil that extends over two sides. Combine in a large saucepan:

  • 2 ½ sticks (10 ounces) unsalted butter
  • 1 ¼ cups smooth peanut butter or tahini

Cook over medium heat until the mixture comes to a boil. Remove from the heat and add:

  • 1 ½ teaspoons vanilla
  • ¼ teaspoon salt

Stir in:

  • 4 ½ cups powdered sugar, sifted

Mix well to combine. Pour the mixture into the prepared pan. Cover the fudge directly with a piece of plastic wrap. Chill until firm. Cut the fudge into 1-inch squares and store.
