Substitute 12 ounces high-quality milk or white chocolate for the dark chocolate in Dark Chocolate Truffles and reduce the amount of cream to ½ cup. Use the microwave method described above, or combine the chocolate and cream in the top of a double boiler or a heatproof bowl placed over hot, not boiling, water and stir frequently until the chocolate is melted and smooth. Let cool, form, and store as directed.
