ICE CREAM SANDWICHES
For each sandwich, spoon partially softened ice cream between two cookies, then refreeze. Some favorite combinations are:
Roll the sides in:
- Shredded coconut, toasted, or chopped toasted nuts
- Chocolate or multicolored sprinkles
- Miniature chocolate chips
