CHOCOLATE PUDDING POPS
About eight 3-ounce pops

Whisk together in a medium saucepan:

  • ½ cup sugar
  • ¼ cup Dutch-process cocoa powder, sifted
  • 2 tablespoons cornstarch
  • ¼ teaspoon salt

Whisk into the sugar mixture:

  • 1 cup milk
  • 1 cup heavy cream

Bring to just under a simmer over medium heat, whisking constantly. When the mixture thickens, remove from the heat and whisk in:

  • 2 ounces semisweet or bittersweet chocolate (up to 64% cacao), chopped
  • 1 teaspoon vanilla

Let cool completely. Freeze and unmold as described in Fruit Ice Pops.
