PEACH SORBET

Prepare Raspberry Sorbet, substituting 1 ½ pounds soft, ripe peaches, peeled and pitted for the raspberries. Use 2 tablespoons lemon juice and add it to the peaches before they are pureed. Taste the mixture after chilling and add more lemon juice if needed. If desired, substitute (amaretto or peach brandy) for the framboise or vodka.
