FIOR DI LATTE GELATO

Fior di latte means “flower of milk.” It is an incredibly simple flavor that relies solely upon the highest quality milk you can buy. Grass-fed milk and cream from a local dairy will be your best bet. This is the perfect gelato to serve with seasonal fruit.

Combine in a medium saucepan over medium heat and cook, stirring frequently, until the sugar is dissolved:

  • 1 cup best-quality heavy cream
  • 1 cup sugar
  • ⅛ teaspoon salt

Transfer to a medium bowl and stir in:

  • 2 ½ cups best-quality whole milk

Refrigerate the gelato base until cold, overnight if possible, or quick-chill in an ice water bath.

Pour the base into an ice cream maker and freeze as directed. Transfer to a container with a tight-fitting lid and freeze for at least 4 hours to harden.
