ORANGE ICE MILK
About 3 cups

Ice milk is less creamy than ice cream, but it is also more refreshing.

Combine in a small bowl and stir until the sugar is dissolved:

  • Finely grated zest of 1 orange
  • ¾ cup orange juice
  • ⅔ cup sugar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla
  • Pinch of salt

Place in a medium bowl:

  • 2 cups very cold whole milk

Gradually stir the orange juice mixture into the milk. If the milk looks slightly curdled, it will not affect the texture of the ice milk. Pour into an ice cream maker and freeze as directed.

Transfer to a container with a tight-fitting lid and freeze for at least 4 hours to harden.
