SPICED RICE PUDDING

This recipe is based on the Indian dessert kheer, a rice pudding flavored with cardamom and saffron.

Proceed as for:

  • Stovetop Rice Pudding

Adding along with the milk and sugar:

  • 1 teaspoon ground cardamom

About 10 minutes before the rice has finished cooking in the milk, add:

  • ¼ teaspoon saffron threads

When the rice has finished cooking, remove from the heat and stir in:

  • ⅓ cup roasted, unsalted pistachios, chopped
  • (¼ cup slivered almonds, chopped)
  • (1 teaspoon rose water)

Omit the vanilla, if using.
