RICE PUDDING BRÛLÉE

Prepare Stovetop Rice Pudding and transfer to heatproof ramekins, or make individual Baked Rice Pudding, omitting the crumb topping. Refrigerate the puddings until cold. Sprinkle each pudding with 2 to 3 teaspoons light brown sugar. Broil or torch the puddings to caramelize as for Crème Brûlée.
