LEMON OR LIME GELATIN

Pour into a medium bowl:

  • 3 tablespoons cold water

Sprinkle over the top:

  • 1 envelope (2 ¼ teaspoons) unflavored gelatin

Let stand for 5 minutes. Add and stir to dissolve the gelatin:

  • 1 ⅓ cups boiling water

Add and stir until dissolved:

  • ¾ cup sugar
  • ¼ teaspoon salt

Add:

  • ⅓ cup strained lemon or lime juice

Pour the mixture into a wet 3- to 4-cup mold. Refrigerate until set, about 4 hours. If desired, when the mixture is set to the thickness of unbeaten egg whites, stir in:

  • (1 teaspoon grated lemon or lime zest)

Unmold and serve with:
