OLD-FASHIONED CHOCOLATE PUDDING

Have ready a 3-cup bowl or mold or four 5- to 6-ounce cups or ramekins. Whisk together in a medium heavy saucepan:

  • ½ cup sugar
  • 3 tablespoons unsweetened cocoa powder
  • 3 tablespoons cornstarch
  • ¼ teaspoon salt

Whisk in gradually:

  • 2 cups whole milk

Cook over medium heat, stirring occasionally, until the mixture comes to a simmer, and continue to cook for 1 minute. Remove from the heat and stir in:

  • 2 ounces unsweetened or bittersweet chocolate, chopped
  • 1 teaspoon vanilla

Stir until the chocolate is completely melted. Finish and store as for Vanilla Pudding.
