FLUFFY HARD SAUCE
About 3 ¾ cups

Combine in a large bowl or a stand mixer:

  • 2 sticks (8 ounces) unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • 2 teaspoons vanilla
  • ½ teaspoon grated or ground nutmeg

Beat on high speed (with the paddle attachment if using a stand mixer) until light and fluffy but thick enough to hold a firm shape, 6 to 10 minutes. With the beaters running, slowly add:

  • ¼ cup brandy, Cognac, dark rum, or orange juice

If desired, add:

  • (Grated zest of 1 orange)

Use at once or cover and refrigerate for up to 3 days. Soften the cold sauce at room temperature until spreadable before serving.
