VANILLA SAUCE
About 1 ¼ cups

Perfect drizzled on bread puddings or chocolate custards or soufflés.

Combine in a small heavy saucepan:

  • ¼ cup sugar
  • 1 tablespoon cornstarch
  • 1 cup cool water

Cook over medium heat, stirring, until as thick as heavy cream, about 10 minutes. Remove from the heat. Stir in until smooth:

  • 3 tablespoons unsalted butter
  • ⅛ teaspoon salt
  • Seeds scraped from 2-inch piece vanilla bean
  • (2 tablespoons dark rum)

Serve warm or at room temperature.
