MANGO COULIS
About 1 ¼ cups

This tropical sauce is especially nice with banana and coconut desserts.

Peel, pit, and dice:

  • 1 large ripe but firm mango

Puree in a blender or food processor with:

  • 2 tablespoons sugar, or more to taste
  • 2 tablespoons water
  • 1 tablespoon strained lime or lemon juice

If needed, thin with a bit more water and adjust sugar and acidity. Serve, at room temperature or chilled. Cover and refrigerate for up to 3 days.
