I. RICOTTA–GOLDEN RAISIN
Blend in a food processor until smooth:
- 1 ½ cups whole-milk ricotta
Transfer to a bowl. Add and mix well:
- ½ cup golden raisins or sultanas
- ¼ cup sugar
- 1 large egg
- Finely grated zest of 1 lemon
II. CREAM CHEESE
Blend in a food processor until smooth:
- 4 ounces cream cheese, cut into cubes
- 3 tablespoons sugar
- (½ teaspoon ground cinnamon)
- Finely grated zest of 1 lemon
- 1 tablespoon heavy cream
Use immediately or refrigerate for up to 3 days.
