POPPY SEED FILLING COCKAIGNE
Enough for one 9-inch ring

Grind in a spice grinder:

  • ½ cup poppy seeds

Put the poppy seeds in a small saucepan and add:

  • ¼ cup milk

Bring to a boil, then remove from the heat and stir in:

  • ⅓ cup packed brown sugar
  • 2 tablespoons butter

Stir in:

  • 2 large egg yolks

Heat over medium-low heat, stirring constantly, until the mixture thickens slightly. Let cool slightly, then add:

  • ⅓ cup almond paste, store-bought or homemade, or ½ cup almond meal or flour
  • (3 tablespoons chopped candied citron)
  • (2 teaspoons lemon juice or 1 teaspoon vanilla)

Let cool completely before using.
