DRIED FRUIT FILLING
Enough for one 9-inch ring

Combine in a medium saucepan and bring to a boil:

  • 8 ounces pitted prunes, dried apricots, dried figs, or dried dates, chopped
  • 1 cup water, apple cider, or orange juice
  • ¼ cup sugar
  • Pinch of salt

Reduce the heat and simmer until the fruit is very soft, 20 to 30 minutes. Some fruits are drier than others—add more liquid and cook a bit longer, if necessary. Stir in:

  • 2 tablespoons lemon juice
  • (2 tablespoons Armagnac or Cognac)

Transfer to a blender or food processor and puree. Transfer to a bowl and cool before using.
