APRICOT CUSTARD FILLING
About 1 ½ cups

Combine in a small saucepan and simmer gently for 25 minutes:

  • ½ cup loosely packed dried apricots
  • 1 cup water

Stir in:

  • 1 tablespoon sugar

Simmer until the liquid is reduced to a glaze, 3 to 5 minutes. Puree the mixture in a food processor until smooth. Prepare:

Stir the apricot puree into the hot filling, then strain and chill as directed.
