PEANUT BUTTER FROSTING
About 2 cups

Stir in chopped roasted peanuts to taste, or sprinkle them over the finished cake, if desired. This is excellent with chocolate cake.

Beat in a medium bowl, or in a stand mixer with the paddle attachment, just until blended:

  • ½ cup smooth peanut butter
  • 3 ounces cold cream cheese, cut into cubes
  • 3 tablespoons heavy cream or milk
  • 1 ½ tablespoons unsalted butter, softened
  • 1 teaspoon vanilla

Add one-third at a time and beat just until smooth and the desired consistency is reached:

  • 2 ⅔ cups powdered sugar, sifted

If the frosting is too stiff, add, but do not overbeat:

  • 1 to 2 tablespoons heavy cream or milk, or as needed
