ADDITIONS TO WHIPPED CREAM

You may flavor cream by infusing it as directed in Flavorings for Custard Bases, then chill the cream thoroughly and proceed as for Whipped Cream.

Or, prepare Whipped Cream, adding any of the following along with the vanilla and sugar:

  • 2 teaspoons instant coffee or espresso powder
  • 1 to 1 ½ tablespoons liquor or liqueur, such as Grand Marnier, framboise, or Frangelico
  • ½ teaspoon ground cinnamon
  • Finely grated zest of 1 lemon or lime and 2 teaspoons lemon or lime juice

Or, before whipping, stir one of the following into a small portion of the cream until smooth, then pour into the rest of the cream and whip as directed:

  • 2 tablespoons unsweetened cocoa powder (use ⅓ cup sifted powdered sugar to offset the bitterness of the cocoa)
  • 2 tablespoons unsweetened cocoa powder plus 2 teaspoons instant coffee or espresso powder (use 2 to 3 tablespoons sugar)

Or use one of the following instead of vanilla:

  • ½ teaspoon rose water or peppermint extract
  • ¾ teaspoon orange flower water

Or, replace the sugar with:

  • Maple syrup, sorghum syrup, maple sugar, coconut sugar, or Vanilla Sugar

Or fold any of the following into the finished whipped cream:
