MAPLE CURLS
About fifteen 3-inch curls

These first appeared in Joy in 1963.

Preheat the oven to 350°F. Grease or line a baking sheet or cookie sheet with parchment paper. Have ready several rolling pins or bottles of about the same size to shape the wafers.

Combine in a medium saucepan, bring to a hard boil, and cook for 30 seconds:

  • ½ cup (160g) maple syrup
  • 4 tablespoons (½ stick or 55g) unsalted butter

Remove from the heat and stir in:

  • ½ cup (65g) all-purpose flour
  • ¼ teaspoon salt

When well blended, drop the dough by the tablespoon 3 inches apart onto the prepared baking sheet. Bake until the cookies are browned, 12 to 16 minutes, rotating the sheet halfway through. Let cool on the sheet for 2 or 3 minutes, then mold each still-warm cookie over a rolling pin or glass bottle. If some of the wafers cool too much to shape, return the sheet to the oven briefly to warm and soften them.
