These cookies and Almond Krumkakes may be made into fortune cookies for a party. Print the fortunes on small strips of paper. Shaping the cookies is best done by two people, as the cookies cool quickly and then become impossible to shape.

Preheat the oven to 350°F. Line 2 baking sheets or cookie sheets with parchment paper or silicone liners.

Stir together in a medium bowl:

  • 3 large egg whites
  • ⅔ cup (130g) sugar
  • ⅛ teaspoon salt

Stir in one at a time, beating until blended after each addition:

  • 1 stick (4 oz or 115g) unsalted butter, melted and cooled slightly
  • ½ cup (65g) all-purpose flour
  • (⅓ cup [30g] almond meal or flour)
  • ¼ teaspoon vanilla or 1 ½ teaspoons lemon juice

Drop by the tablespoon about 4 inches apart onto the baking sheets. Bake 1 sheet at a time until the edges are golden brown, about 10 minutes, rotating the sheet halfway through. While the cookies are still warm, turn over one cookie at a time, place a fortune in the center, letting part of the paper stick out, and fold the cookie in half. Pinch closed and lift the cookie and bring the corners together to make a C shape. Set on a rack to cool. If some of the cookies cool too much to shape, return the sheet to the oven briefly to warm and soften them.
