I. DRIED FRUIT
Combine in a small heavy saucepan and bring to a boil:
- 1 cup chopped raisins, dried figs, dates, or apricots
- 6 tablespoons (70g) sugar
- 5 tablespoons (75g) water
- Finely grated zest of 1 lemon or orange
- 1 tablespoon (15g) lemon juice or ¼ cup (60g) orange juice
- 1 tablespoon (15g) unsalted butter
- ⅛ teaspoon salt
Boil, stirring, until thickened. Cool before using.
II. COCONUT
Combine in a bowl:
- 1 ½ cups flaked or shredded coconut, chopped
- ½ cup packed (115g) brown sugar
- 1 large egg, lightly beaten
- 1 tablespoon (10g) all-purpose flour
- Finely grated zest and juice of 1 lime
III. MINCEMEAT
Use about ¾ cup drained store-bought mincemeat or prepare half the amount of filling for Mock Mincemeat Pie.
