ADDITIONS TO ICEBOX COOKIES

  • Add 2 teaspoons loose Earl Grey tea, finely ground, and the finely grated zest of 1 orange along with the vanilla
  • Substitute ⅓ cup packed (75g) brown sugar for half of the powdered sugar and add 1 cup mini semisweet chocolate chips along with the flour mixture
  • Omit the lemon zest and add 4 ounces (115g) semisweet or bittersweet chocolate, melted and cooled, before adding the egg
  • Add the finely grated zest of 1 orange to the butter-sugar mixture and ½ cup finely chopped dark chocolate along with the flour mixture
  • Add the finely grated zest of 1 lemon and 2 tablespoons poppy seeds along with the vanilla
  • Add ½ cup chopped toasted nuts along with the flour mixture
  • Add ⅓ cup cocoa nibs along with the flour mixture
  • Substitute rose water for the vanilla, and add ⅓ cup finely chopped pistachios along with the flour mixture
  • Add the finely grated zest of 2 limes and ½ teaspoon ground cardamom along with the vanilla
  • Add ⅓ cup finely chopped candied ginger along with the flour mixture
  • Substitute packed brown sugar for the powdered sugar, substitute 1 tablespoon coffee liqueur for the vanilla, and add 1 tablespoon instant espresso powder along with the liqueur
  • Substitute packed brown sugar for the powdered sugar and add ¾ teaspoon ground cinnamon, ½ teaspoon ground ginger, ¼ teaspoon grated or ground nutmeg, ¼ teaspoon ground allspice, and teaspoon ground cloves to the flour mixture
