PB&J BARS
Twenty-four 2 ¼ × 1 ½-inch bars

A lunchbox classic in bar cookie form.

Preheat the oven to 375°F. Lightly grease a 9-inch square baking pan and line with parchment paper so it extends over 2 sides.

Prepare the dough for:

  • Peanut Butter Cookies

Press two-thirds of the dough into the prepared pan. Spread over the dough:

  • ¾ cup grape jelly, or raspberry or strawberry jam

Crumble the remaining dough over the jam or jelly. Sprinkle on top:

  • ⅓ cup roasted peanuts, coarsely chopped

Bake until firm, about 25 minutes. Let cool completely in the pan on a rack before cutting into bars. Store in an airtight container for up to 2 weeks.
