16 small cakes

Financiers are a ubiquitous French treat available at nearly every bakery. They are so easy to whip up and so supremely tasty that we wonder why they aren’t as popular in the United States.

Preheat the oven to 375°F. Grease 16 cups of a mini muffin tin.

Whisk to combine in a medium bowl:

  • 1 cup (90g) almond or hazelnut meal
  • ½ cup (100g) sugar
  • ¼ cup (30g) all-purpose flour
  • ¼ teaspoon salt

Add and mix in until smooth:

  • 2 large eggs
  • 5 tablespoons (70g) unsalted butter, melted
  • 1 teaspoon vanilla or ½ teaspoon almond extract

Divide the batter among the muffin cups, filling them three-quarters full. Bake until risen and browned, 12 to 15 minutes.

Let cool completely in the muffin tin on a rack, then remove the cakes from the tin.
