CHOCOLATE-FILLED ROLL
One 10- or 11-inch roll; about 10 servings

Prepare Cake Sheet for Roll Cakes. Spread the cooled sheet with 3 cups Whipped Ganache Filling or Whipped Cream flavored with cocoa powder and/or espresso powder or 1 ½ to 2 cups Chocolate Buttercream, Chocolate Pastry Cream, or Mocha Pastry Cream. Roll, wrap, and refrigerate as for Cake Sheet for Roll Cakes. If desired, sift (powdered sugar or cocoa powder) over the cake before serving.
