LEMON ROLL
One 11-inch roll; about 10 servings

This is superb made with angel food cake baked as a sheet, and the cake conveniently yields surplus yolks for the curd or custard filling.

Prepare Cake Sheet for Roll Cakes. Spread the cooled sheet with 1 ½ cups Citrus Custard Filling or Lemon Curd. Roll, wrap, and refrigerate as for Cake Sheet for Roll Cakes. If desired, sift (powdered sugar) over the cake before serving.
