GUY FAWKES DAY CAKE
One 8-inch square cake; 16 servings

Also called parkin, this not-too-sweet cake is the traditional gingerbread of northern England. It is perfect with a dollop of Whipped Cream.

Preheat the oven to 350°F. Grease an 8-inch square baking pan.

Melt and stir together in a saucepan:

  • 1 stick (4 oz or 115g) unsalted butter
  • ⅔ cup (230g) molasses

Remove from the heat. Whisk together thoroughly in a large bowl:

  • 1 cup (125g) all-purpose flour
  • ⅔ cup (65g) old-fashioned rolled oats
  • 1 tablespoon (10g) sugar
  • 1 teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • (Finely grated zest of 1 lemon)

Stir the melted butter mixture into the flour mixture in 2 parts, alternating with:

  • ⅔ cup (155g) milk

Stir just until the dry ingredients are moist. The batter will be thin. Pour into the pan and bake until the cake begins to pull away from the sides of the pan, about 35 minutes.

Let the cake cool in the pan on a rack.
