VEGAN ORANGE CAKE
One 8-inch round cake; 8 to 10 servings

A deeply flavored cake needing only a light dusting of powdered sugar for garnish.

Preheat the oven to 350°F. Coat an 8-inch round cake pan with cooking spray and line the bottom with a round of parchment paper.

Whisk together in a large bowl:

  • 1 ½ cups (190g) all-purpose flour
  • ¾ cup (150g) sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Whisk together in a medium bowl until smooth:

  • Finely grated zest of 1 orange
  • 1 cup (245g) orange juice
  • ⅓ cup (70g) vegetable or olive oil
  • 1 teaspoon vanilla

Fold the orange juice mixture into the flour mixture just until combined. Scrape the batter into the prepared pan. Bake until a toothpick inserted into the center comes out clean, 35 to 40 minutes.

Let cool in the pan on a rack for 10 minutes. Slide a thin knife around the cake, invert it, peel off the parchment paper, and turn the cake right side up on the rack to cool completely. Dust with:

  • Powdered sugar
